I would look over on my wedding day and see her busy as a bee filling in for all the things that were needed at the time: scraping dishes, bussing, managing the timeline, coordinating with vendors. She is worth EVERY. SINGLE. PENNY. I know what it's like to be overwhelmed with the money aspect of things, but I have to say, having the right vendors makes the biggest difference and is worth it (and New West is priced super fairly).
